Carotenoid-Derived Aroma Compounds

Although many aspects of carotenoid research are comprehensively covered in recent monographs, the aroma chemistry of carotenoid-derived compounds has not been explored. This volume highlights the importance that carotenoid metabolites have in the flavor and fragrance industry.
